How restauranteurs accommodate outdoor dining comfortably and safely during a Colorado winter while navigating the COVID-19 pandemic has no simple solution. To develop ideas, Governor Polis and the Colorado Restaurant Association brought together designers, urban planners, public health officials, building and permitting officials, local fire departments, and restauranteurs to develop aspirational concepts for outdoor dining during Colorado’s cold-weather months.
